    Braised Pork w/ Eggs aka Thit Kho Nuoc Dua

    Marinate and prepare pork for at least 30 minutes 

    1 teaspoon sugar
    1 teaspoon chicken powder
    1 teaspoon salt
    2 soupspoon fish sauce ( I use 3 crabs brand)
    6 stalks of onion (use the white part, cut in half)
    4 cloves of garlic
    White or black pepper 
    Squeeze of fresh lemon

    Mix all in the pork to marinate then stick into fridge 

    Boil 10-12 eggs for 25 minutes (add a couple spoons of vinegar into boiling water  so shell peel off easier when done)


    Heat up pot on high heat
    Add a couple spoons of cooking oil
    Put marinated ingredients into pot, stir well until meat shrivels up

    In the same pot, add 1 can of chicken broth (Swanson’s brand) 
    2 cans of coco Rico 
    4 cups of water
    When it reaches boiling point, scoop out some bubbles Then turn fire to medium 
    Add 1 whole yellow onion into broth
    A pinch of sugar
    1 teaspoon of salt
    2-3 cubes of Rock sugar 

    Notice the egg is white. After 45 minutes, the eggs will turn to a pretty brown

    Also, notice how the soup level has decreased after 45 minutes 

    Another 45 minutes more, the pork will be soft and tender. Check and taste for tenderness. Add more minutes if desired.
