Xoi Khuc aka Spinach and Pork Dumpling
Ingredients:
4 -5 cups of glutinous rice ( soak overnight), next day, rinse under hot water and let sit aside to dry
1/2 bag of mung bean (cook in boiling water for 45 minutes or until soft where you’ll grind it into a paste) then set aside
1 bunch of spinach
0.75 lb of ground pork
1 bag of glutinous rice flour
1 soupspoon rice flour
1/2 tsp salt
1purple onion diced
Step 1:
1. soak 4-5 cups of glutinous rice overnight
2. Next day, rinse rice under hot water and let sit in drainer to dry
3. Add 1tsp salt in glutinous rice and mix well
Step 2:
1.pour 1/2 bag of mung bean(no shells) into pot to boil for 45 minutes or until soft
2. Let sit aside in drainer to dry
3. Grind or smash into paste
Step 3:
1. Add 1 bunch of chopped spinach into blender w/ 2 1/2 cups of cold water
2. Blend into juice and filter with cheesecloth then put aside
Step 4:
1. In large bowl, pour in 1bag of glutinous rice flour and 1 soupspoon of rice flour
2. Add 1/2 tsp salt
3. Then warm up 1 cup and 1/4 cup(9) of spinach juice for 1 minute in the microwave
4. Pour slowly into #1 and knead as u go along
5. When it’s smooth and free of clumps, let it rest for 10 minutes. See pic

1. Diced 1 purple onion and put in bowl
2. Prep .75 lb of ground pork in bowl then ready to marinate
3. Add 1/2 tsp salt
4. 1 tsp sugar
5. 1/2 tsp chicken powder
6. 1 tsp fish sauce
7. 0.75 tsp black pepper
8. 1 tsp diced purple onion
9. Mix well in ground pork
10. Marinate for 10 minutes
Step 6:
1. Put frying pan on high heat
2. Add 2 tsp cooking oil in pan
3. All the dice purple onion in pan then fry
4. When it turns crispy brown, add in the ground pork and stir well
5. Then pour in the mashed mung bean, stir and blend well
6. Add 1/2 tsp black pepper in , mix well
7.turn off heat and put aside to cool
Step 7:
1. Rolls them into 16 balls
2.roll flour into 16 balls as well
3. Fill steaming pot with water then turn on high heat
4. Flatten flour with ur palm, put pork balls in middle of flour and envelope the pork fillings

1. Sprinkle steamer tray with glutinous rice (as shown in pic)
2. Roll the ball into the rice and set in tray
Follow pics and steam for 30-40 minutes
During the last 10 minutes of steaming, open lid and water 4-5 soupsooon of water (fridge or tap) over spinach dumpling then close lid
