    Tapioca Starch Coconut Cookie

    This took me at least 3 hours to make. I did this last year but used regular food coloring. I must have forgotten how labor intensive it was to even try again. This time, I used natural coloring, the pink cookies with beets juice and the green with spinach juice.

    After all, it came out a success and according to me, is a healthy treat cuz it has 2 of the most important vegetables that are  loaded with all the nutrition for a well balanced diet. This is just a fib so don’t even count me on it.

    Ingredients:
    1 bag (14 oz)of tapioca starch aka bot nang
    1 cup of coconut cream
    1 cup of sugar
    1 stem of beet processed with 1/4 cup of water into juice for pink coloring
    6-8 leaves of spinach processed with 1/4 cup of water processed into juice for the green coloring
    2-3 pandas leaves
    Flour prep

    1.  pour 1 bag of tapioca starch into a big pot
    2. On low heat, stir constantly for 20 minutes
    3. let sit to cool off

    Coconut Cream prep
    1. In a smaller pot on medium heat, pour in 1 cup of coconut cream
    2. Add 1 cup of sugar
    3. Turn heat to low and stir constantly for 15 minutes
    4. Let sit to cool off

    Food Coloring prep

    Green
    1. Add 1/4 cup of water into processor with 6-8 leaves of spinach
    2. Use cheesecloth to strain juice

    Pink
    1. Add 1/4 cup of water into processor with 1 beet stem, break into smaller parts
    2. Use cheesecloth to strain juice

    When coconut cream cools off, pour half into the green and the other half into the pink and add 2 tsp of pandan extract into each then stir well.

    Divide the tapioca starch into 2 portions

    In 1 bowl starting with a 1/4 of the flour, add the coloring in. Mix well then add more coloring until all the powder are used up. If the flour stays when u press them together then you’re good to start molding them.

    I’ll be making more of the green color tomorrow since I still have 1/2 cup of cooked coconut milk left. I shouldn’t have poured all the spinach juice in the coconut mix, otherwise, I would use that plain coconut mix for something else.
