Ingredient:
1 fryer
1 1/2 yellow onion
Prapika powder
Curry powder
Lemongrass fresh stalks or frozen chopped
Chicken powder
3 yams
6 carrots
6 potatoes
2 sweet potatoes (preference)
3 cans of chicken soup
2 cans of coco Rico
2 cans of coconut cream
To marinate:
Cut chicken into smaller portions
Wash and let dry
In fryer bowl
1. add 2 tsp of sugar
2. 1 tsp salt
3. 1 tsp chicken powder
4. 1 soupspoon fish sauce
5. 1 full tsp chopped lemongrass
6. 1 tsp diced onion
7. 1 tsp curry powder
Mix well into chicken then add black pepper
Marinate over night for better taste or 30 minutes if u got no time
Next day:
Cut the yam (4-6 portions) depending on size
Cut the sweet potatoes (4-6 portions] depending on size
Cut the carrots sideway 2-3”
Cut the potatoes into 4 or 6 depending on its size
Fry each individually for 10-15 minutes then put aside to cool
Prepare 1 big pot on high heat
1. Add 2 soupspoon cooking oil
2. Diced onion
3. 1 full tsp of Chopped lemongrass
4. Bay leaf ( preference)
Stir well then lower the heat to add in
1. 1 tsp full of curry powder
2. Continue frying
3. Add 1 tsp of praprica powdeer + stalks of lemongrass and fry them well
4. Add in marinated chicken and mix well until the meat started to shrink
5. Add in 2 cans of coco Rico
6. Add in 3 cans of chicken soup
7. 3 cups of hot water
8. 1 cup of whole milk(preference)
9. Add in all the Fried potatoes and carrots
10. Turn to medium low when it started boiling then close lid
11. 15 minutes before meat is tender, add in 2 cans of coconut cream
12. 1 tsp salt and put in that 1 full onion that you’ve cut in1/4 earlier
13. 1 tsp sugar then close lid again
14. After 15 minutes, check to make sure chicken and potatoes are tender then turn off fire
As a side note:
1/2 yellow onion chopped or diced
1 full yellow onion cut into 1/4
Voila, you’re done.
