Oven Baked Banana in Sticky Rice
Ingredients:
Banana leaves
Pandan leaves
Fresh young Coconut
5 big bananas or 6 small bananas
3 cups of glutinous rice
1 can of coconut cream
Step 1:
1. Wash 3 cups of glutinous rice well
2. Add in 1-14 oz can of coconut cream
3. Add 1 1/2 cup of cold water
4. Add 1/2 tsp salt, stir well
5. Wrap with Saran Wrap then microwave for 6 minutes
6. Take out, Stir again using chopsticks
7. Saran Wrap and stick in microwave for 5 more minutes
8. Take out and stir well then saran Wrap and stick in microwave for 4 minutes ( if rice is not cooked or sticky)
9. Take out, stir well then Saran Wrap and microwave for 3 more minutes
10. Add 3 soupspoon sugar into rice and mix with chopsticks
11. Seran wrap and stick in microwave for another 2minutes
Let cool off then add grated coconut , mix well using chopsticks
Step 2:
1. In a separate pot, add in 1-14oz coconut cream
2. Add 1/2 can of water
3. 1 small bunch of pandan leaves
4. 2 soupspoon sugar, 1 tsp salt
5. Cook for 15 minutes then add (2/3 tapioca starch mixed with 1 soupspoon cold water, mix well first before pouring in)
6. Use seran wrap, put rice in, smooth out with seran wrap, put in banana then wrap again like how u wrap sushi
7. Take seran wrap off, roll banana with sticky rice on grated coconut, then tear off banana leaves into small pieces and wrap them on banana
8. Stick in oven for 500 degrees for 10-15 minutes then take out and ready to serve
