Xoi  Ga aka Chicken Sticky Rice Empty Xoi Ga aka Chicken Sticky Rice

3 cups of glutinous sticky rice
2 1/4 cups of water
6 Chicken drumsticks
Green onion
White onion
Fried shallots


Step 1:

1. Wash and soak chicken in salt and vinegar for 15 minutes
2. Add 1 tsp chicken powder
3. 1/2 tsp salt
4. 1 tsp sugar
5. 1 soupspoon fish sauce
6. 1/2 tsp black pepper
7. Mix well  then add 1 soupspoon chopped white
onion
8. Marinate overnight

Step 2:
1.rinse 3 cups of glutinous rice well and let sit in strainer to dry
2. Add 2 1/4 cups of water
3. 1/2 teaspoon chicken powder
4. 1/2 teaspoon salt
5. 1tsp dark soy sauce
6. 1/2 tsp soy sauce
7. Stir well then add 1 soupspoon of cooking oil
8. Put in rice cooker and cook

Step 3: Oiled Onion

1. Chop 1bunch green onion, add 1/2 tsp salt, 1/2 tsp sugar, pinch of chicken powder, 2 soupspoon cooking oil, mix well then cover with seran wrap and microwave for 40 seconds 


Step 4:
1. Prepare frying pan on high heat
2. Add A portion of white onion in
3. Add marinated chicken 
4. Lower fire until both sides are crispy yellow
5. When done, let sit aside to cool off then start stripping them into small strips


Step 5:

1. Add 2 soupspoons of cooking oil in frying pan
2. Add minced white onion
3. Stir chicken strips until it’s yellow then turn over
3. Taste and add 1/2 tsp salt then mix again
4. Stir until strips golden brown then turn over fire

I used the white left over chicken meat from a few days ago.

Sticky rice with chicken strips are too blah so I added fried eggs, Chinese sausages and shrimp which turned this plain dish into a sticky rice combination. Yummy!
