Braised Caramelized Catfish aka Ca Kho
I don’t have a clay pot so a regular frying pan should work just fine.
1 catfish
Shallots
Green onion
Fish sauce
Chicken powder
Salt-
Sugar
Garlic
Pepper
Coco Rico
Marinate
1. 1/2 tsp salt
2. 1 tsp sugar
3. 1 soupspoon fish sauce
4. 1/2 tsp chicken powder
5. 1 tsp pepper
6. 1 soupspoon diced garlic
7. 1 soupspoon fried garlic
Mix all ingredients then marinate catfish for at least 15 minutes
Preparation:
Chop onion- 1 soupspoon onion
Chopped garlic- 1 soupspoon
1. add 1 soupspoon cooking oil into frying pan then add 3 soupspoons sugar
2. Stir until it’s caramelized then add in marinated catfish
3. Add 1/3cup of fish sauce
4. 1 tsp pepper
5. 1/4 cup coco Rico
6. Mix then then close lid- cook for 30 minutes on medium-low heat (don’t forget to flip then over every 3 minutes)
In the meantime,
1. cut the green onions-3”
2. Chop 1/2 cup of garlic then fry them and set aside
3. 2 Thai pepper
4. add in chopped garlic (you can add more or less garlic depending on your preference)
5. After 30 minutes or until the fish is cooked, at in cut + chopped green onions and garlic
6. Close lid for an additional 5 minutes and you’re done
