Sticky Rice Dumpling aka Banh It Tran
Ingredients:
1 bag glutinous rice flour-1lb
1 soupspoon of rice flour
1/2 bag yellow mung bean
1 purple onion diced
1 bunch of green onion cut into small pieces
1 lb ground pork
Step 1: make dough
1. In container, add 1bag of glutinous rice flour
2. Add 1 soupspoon of rice flour
3. 1/2 tsp salt
4. 1 + 3/4(3), microwave water for 1.3minites
5. add water into container then knead dough
6. Let dough rest
Step 2: mung bean
1. Steam or boil 1/2 bag of mung bean then add a pinch of salt
2. Grind bean then put aside
Step 3: marinate pork
1. Use 1 lb of ground pork
2. Diced 1/2 of diced onion + chopped green onion in pork
3. Marinate 1/2 tsp salt, 1 tsp sugar, 1/2 tsp chicken powder
4. 1 full tsp black pepper
5. Add 1 tsp fish sauce, mix well
Step 4:
1.prepare frying pan on high heat
2.add 1 soupspoon cooking oil
3. Add 1/2 of diced onion with chopped green onion, stir well
4. Add marinated pork into frying pan
5. Mix until meat is well done then add 1/2 bag of cooked mung bean, mix again
6. Add 1/2 tsp pepper, mix well and let sit to cool
7. Roll meat into tiny balls as stuffings with dough wrapped outside(use water and cooking oil, pat on Palm if dough is too dry while making them into balls) see pics
8. In boiling pot of water, add 1tsp cooking oil
9. Drop eat balls in carefully when water reaches boiling water
10. When balls start floating, remove them and put in a tub of cold water so they don’t stick then put in drainer 5 minutes later to dry
11. Add onion with oil on top, sprinkle fried shrimp on top, then fried onion
Can be eaten with banh beo aka steamed rice cake.
