Steamed Coconut Rice Cake
Ingredients:
Cake:
1/4 tsp vegetable oil
2 cups rice flour
1 1/2 Tbsp tapioca starch
1/4 tsp salt
2 cups water, room temperature
3/4 coconut milk
Accompaniments:
1/4 cup scallion oil
2 Tbsp fried onions
1/2 cup toasted shrimp flakes
1/2 cup carrot and Daikon radish pickles
1/2 cup fish sauce dipping sauce
Yields: 6 servings
